Happy Holidays, food and etc.

One of the things I miss about having a car or any vehicle was piling my friends in it and touring the area for Christmas decorations that splendor the lawns and houses of really creative people. We all had a list of where we wanted to go. We took turns driving, spending hours just touring parts of the city and long island lurching most of the way because one of were sure to say ....OHHHHH look at that one" Not having much of a family my friends are important to me. We are Jewish , catholic or any other religion or nationality but we have a closeness of sharing ours lives together.
This year we won't be doing that because of different things going on in ours lives but those memories that we shared will stay with me for ever. Thank you girls. Happy Holidays.

Tonight I made a one pan meal on my wonderful propane stove. This thing. My recipe? Chicken breast cut into small pieces (skin too) onions which I add a lot because I love them. Sea salt ,pepper lemon juice and apple cut up small pieces. Olive oil to the pan. Over brown rice. I forgot tomato sauce and used a table spoon of ketchup LOL. Yummy!!! Have enough for tomorrow lunch and dinner. When I move into the van Im planning on cooking like that..which is a little extra for the next day.     Feeling better now, I guess=?

    WAs over at my brother's home and my contribution was making my favorite cole slaw. We ate up 2/3 of a head of cabbage today --guess they really liked it. I showed him how to make it with the last 3rd which we will have again tomorrow.
    Here is my recipe for my sweet and creamy cole slaw:

    forr 1/2 head of shredded cabbage
    1/2 can of pineapple crush (with juice)
    1 tbsp of pickle relish
    1/4 cup rice vinegar
    1/2 cup brown sugar (or honey)
    1/2 cup of mayonnaise
    1 cup of heavy whipping cream

    you may add 1 small shredded carrot for color.

    Jennifer the stove is so easy to use. Sturdy too..should last for years. Dragonfly has had hers for 20 years! Have a happy one!

    AsianGypseh ...yep feel better thanks :) That recipe I must try. I love cole slaw never had it like that though. Sounds real yummy.

    That recipe is as close as I can get it to a childhood memory of going to a fried chicken place when I was little called "Tom Sawyer". The cole slaw they had there was really creamy and sweet. So it was a perfect pairing with the salted crispy fried chicken... Fried chicken... mmmm... I miss making fried chicken...
